Greetings from the farm where we are fencing the new garden space and ordering seeds from Full Circle Seeds to nourish our guests this summer season.

We are back in the creative process of working on the Milagro Retreats cookbook and hope to have it available in time for the Organic Islands Festival in early July. Milagro and hOMe Grown Living Foods will be nourishing the masses with our Raw Buddha Bar, showcasing the hOMe Grown Living Food line as well as serving up super tasty living treats. Today, May 8th is the Full Moon in Scorpio, a very intense Full Moon to put into action the goals you set at the New Moon in Taurus. Since this Full Moon falls in a water sign, releasing your intentions near a stream, river, lake, or ocean is particularly powerful.

We had the pleasure of catering for Dorothy Price's Yoga Retreat at Stowel Lake Farm on Salt Spring Island recently and highly recommend attending her next Retreat later this month.

White Bean and Vegetable Stew

This nourishing soup is best made with garden fresh vegetables. If you don’t grow these luscious root veggies, buy locally and praise the farmer that turned the soil.

Yields 4-6 servings

1 cup white navy beans, soaked overnight
1 piece of Kombu (seaweed)
1 head roasted garlic
1/2 cup diced leeks
1/2 cup diced carrots
1/2 cup diced parsnip
1/2 cup diced turnip
1-2 tsp dried rosemary or (1 tbsp fresh)
2 cups dark greens (spinach or kale) chopped and rinsed
fresh cilantro or parsley to garnish

Crock Pot Method

1) cook beans with Kombu for 2-3 hours
2) add remaining ingredients, except greens and simmer for 1 hour
3) add greens and simmer 5-10 mins - season and serve

*** This easy soup is only limited by your imagination. We encourage you to experiment with whatever is locally available....or you can follow along with this recipe, and guarantee a great pot-o-soup.

*** We like to use a crock pot, but if you don't have one of these convenient gadgets, the stove top will work fine. Adjust cooking time accordingly.

Nutritional Scoop ~
Navy beans provide a virtually fat-free high quality protein when they’re combined with whole grains, such as rice. They’re also an excellent source of dietary fiber, which helps with lowering cholesterol and preventing blood sugar levels from rising too quickly after eating a meal. Their high fibre content also helps prevent digestive disorders like irritable bowel syndrome and diverticulosis.
