Greetings from the desert oasis of Baja, Mexico where we are fully immersed in paradise. 2010 welcomed us under a Blue Moon, with campfire sing alongs at JP's Yoga and Surf Retreat. Our intentional community of over 20 kindred spirits was a festive bunch with daily circles, lots of full belly laughter and serenading from our musically gifted guests.

The latest addition to our winter/spring retreats is a potent offering....We are excited to be collaborating with Robin Clements at Prana del Mar, March 27th ~ April 2nd for a Full Moon Chakra Journey With Conscious Movement and Breathing.

Agave Cinnamon Rawgles

Sprouted dehydrated living bagels made without flour, sugar or any fillers. These tasty, chewy bread substitutes satisfy carbohydrate cravings while delivering whole food goodness.
Sweetened with low glycemic agave nectar and dates, these moist breakfast or dessert treats are divine smothered with raw almond butter or tahini and fresh apple or pear slices.

Makes approx. 12

Ingredients:

2 cups spelt kernels
1/3 cup pitted dates
1/2 cup water
1/3 cup agave nectar
1inch piece fresh ginger
1 tsp sea salt
1 tsp cinnamon

Mindful Preparation:

1. To sprout the spelt, soak kernels overnight in a wide mouthed jar with 4 cups of water. Drain and rinse thoroughly. Use sprouting lid or cheesecloth secured with a rubber band, place jar on a 45 degree angle. Rinse twice/day until the sprouting tails are the same length as the kernels. This will take approximately 3 days.
2. Soak the dates in the water for 1/2 hour to soften.
3. Blend all ingredients except sprouted spelt into a smooth paste.
4. Blend spelt with paste in a food processor.
5. Scoop by 1/4 cup onto non stick sheets on dehydrator sheets. Press to flatten and poke a hole in the middle to create Rawgle.
6. Dehydrate at 145 degrees for 2 hours, then lower the temperature to 110 degrees for 12-15 hours, until a crust has formed. Remove the sheets and continue to dehydrate for 2 or 3 more hours, depending on your preferred texture. OR line a cookie sheet with parchment paper and bake at the lowest temperature in the oven for 3-4 hours, flip and continue to bake for another hour or so.

*These will keep for up to a month stored in an airtight container or longer in the freezer

Nutritional Scoop ~ Spelt is an excellent source of vitamin B2, a very good source of manganse, and a good source of niacin, thiamin, and copper. This particular combination of nutrients provided by spelt may make it a particularly helpful food for persons with migraine headache, atherosclerosis, or diabetes.
