Updates at Milagro Retreats
Greetings from the Organic Basil Fields of Baja, Mexico. Since we last reached out to you, life has been abundantly full. Our autumn ended with the nourishment of a devoted group of Yogis at Stowel Lake Farm. The southern migration of Milagro Retreats was timely as temperatures dropped on Vancouver Island and winter embraced us.
Our first Retreat of the Winter season with the full moon of November was a transformational experience. The first offering at Prana del Mar, our pristine new Baja location with bamboo floors in the expansive Yoga Studio, organic linens, a gorgeous lap pool and all the amenities we could possibly ask for. Owner/operator Erik Singer was on site to host us and even joined in a few yoga classes with our beloved Dorothy Price. We look forward to our next offering at Prana del Mar, scheduled for November 20-27th, 2010. Stay tuned for details.

New Moon in Sagittarius
Wednesday is the new moon in Sagittarius ~ The perfect time to let go of the need to have recognition for our accomplishments. By giving of ourselves through service, we will be able to bring about positive change. Allowing us to heal and balance our personal karma.

Ancho Black Bean Soup
Spicy and satisfying, this hearty soup has the bold favors of Mexico with the health benefits of black beans and garden fresh zucchini.
Serves 6
Ingredients:
2 Tbsp olive oil
1 onion, diced
2 dried ancho chilis
2 cloves garlic, minced
2 cups black beans, cooked, rinsed and drained
4 cups vegetable stock
2 large tomatoes, chopped or a 14 oz can of diced tomatoes if fresh is unavailable
1 Tbsp ground cumin, toasted
1 Tbsp ground coriander, toasted
1 Tbsp tamari or nama shoyu
2 cups zucchini, chopped
1 cup fresh corn or frozen if fresh is unavailable
sea salt and cracked pepper to taste
Garnish:
fresh cilantro and avocado slices
Mindful Preparation:
1. Saute onion in olive oil over high heat for 2 minutes. Reduce to low, add salt to release liquids and continue cooking until translucent.
2. Add garlic, sauté 5 minutes.
3. Stem, de seed, tear in half and dry roast ancho chili until puffed and aromatic. Puree with 1/2 cup of stock and add to onions.
4. Add beans, stock and tomatoes, simmer for 15 minutes. Puree.
5. Add zucchini and corn, simmer 5 more minutes.
6. Season with sea salt and fresh cracked pepper.
7. Garnish with fresh cilantro and sliced avocado.
Nutritional Scoop ~ In addition to lowering cholesterol, black beans' high fiber content prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia.
