Greetings and Happy Spring to all. It is an amazing
time of year on Vancouver Island. We are enjoying fresh greens and
radishes from the garden, Chocolate Mint that keeps coming back year after
year and parsnips that survived the winter. Between planting the summer
garden and harvesting the endless Nettles that are growing wild, we have
managed to put together an incredible schedule for our upcoming season.
If you have access to Fresh Nettles, brew up a cup of this antioxidant
enriched elixir and read on…….Nutritionally nettles are an excellent source
of calcium, magnesium, iron and numerous trace elements as well as a range
of vitamins. The young shoots can be used in soups and stews and in place
of spinach.

DAY PASSES TO PADMA'S VANCOUVER ISLAND

ANOTHER DELICIOUS RECIPE WITH
NETTLES
Stinging Nettle and Goat Cheese Spanakopita
(serves 6)
6 cups fresh Nettles (spinach may be substituted)
2 Tbsp Olive oil
2 Tbsp Ghee or unsalted butter
3 leeks minced
2 cups diced mushrooms
3 Garlic cloves minced
1 cup goat cheese, either chevre or feta
1 Tbsp dried Dill or 3 Tbsp fresh
sea salt and fresh cracked pepper to taste
6 sheets of phyllo cut into 4 equal strips. Cover with a damp cloth
until ready to use
1/4 cup Olive oil
1 Tbsp Poppy seeds (Opt)
1) Steam nettles until soft. Drain and chop
2) While you are steaming the nettles, saute the leeks in olive oil
and ghee over medium heat until softened. Add salt and mushrooms, saute 10
minutes or until liquid evaporates.
3) In a medium bowl combine tofu and dill
4) Combine all ingredients and let cool
5) Take one strip of phyllo and brush with olive oil, layer
one more onto and repeat olive oil
6) Place 2 Tbsp of filling at the bottom corner and roll in triangles
edge to edge (there should be a diagram on the phyllo packaging)
7) Brush top with olive oil and repeat with remaining ingredients
8) Bake at 375 until browned approx. 20 minutes
***This can be made into a vegan dish by using olive oil instead of
ghee and 1 block firm organic tofu instead of goat cheese***

A YOGA JOURNEY TO MACHU PICCHU AND THE SACRED
VALLEY
Join Tara Crete for an inspirational retreat to the
Sacred Valley of the Incas. This is an amazing journey; one that combines
