Abundant Produce
Welcome to our September Newsletter filled with reflections from the past couple months and insights into our fall and winter programs. This fresh rain is a welcome guest at the Milagro Farm. The dry hot summer has produced an abundant crop of Zucchini, Pole Beans, Squash and assorted other goodies. Our sold out Wellness Weekend September 3-6th will be filled with meals centered around our fresh harvest. Including **Summertime Corn and Vegetable Chowder w/Organic Greens and Cranberry Vinegarette**
And Oven Roasted Garden Fresh Delicato Squash stuffed w/ Organic Brown Rice Pilaf Served w/ Roasted Red Pepper Sauce and Warm Beet Salad** Ohh, I just love this time of year.
What a summer it has been with 2 Sold Out Surf Sister Billabong Yoga and Surf Camps and a Blue Moon Yoga and Surf Retreat with Marne Semick. I have been spending plenty of time in Tofino. The weather was picturesque for the July Yoga and Surf Retreats with record breaking temperatures and perfect learning waves. It could not stay that way forever. The skies opened on us last weekend during our August Surf Sister/Billabong Camp. What a bunch of troopers. Camping in the rain could do nothing to dampen the spirits of our eclectic group of women. They were so excited to surf, that the rain was simply preparation for frolicking in Mother Ocean.


Reflections from the Summer


The Beet Goes On.....
I am overwhelmed with the beauty of our garden these days. One of my favourite ways to prepare Beets is this simple salad. Serve over Organic Arugula with Pralined Pecans for a light lunch or a side dish with dinner

Bodacious Beet Salad (serves 2)
1 /2 lb whole beets
1 Tbsp balsamic vinegar
2 Tbsp extra virgin olive oil
2 Tbsp fresh squeezed orange juice
2 Tbsp fresh dill
Fresh goat cheese (optional)
Celtic sea salt and fresh cracked pepper to taste

1) Boil beets (unpeeled) covered with water until tender, approximately 40 mins.
2) Strain, allow to cool and slide off the skins and slice
3) Whisk remaining ingredients to create dressing
4) Combine with beets, add cheese if desired and season to taste.



October 1-3rd Bellydance and Feldenkrais Retreat
We are so excited about introducing a fusion of Feldenkrais & Bellydance, with an introduction to Raw Cusine. Our second annual offering of Bellydance and Feldenkrais will be a 2 night package, filled with opportunities for expanding our horizons. Recipe of the Moment
The newest Recipe from the Milagro Kitchen is inspired by the never ending Delicato Squash harvest. I hope you enjoy...
Oven Roasted Squash w/Brown Rice Pilaf and Roasted Red Pepper Sauce (serves 4-6)

1 Winter Squash (Delicado, Acorn or Butternut…any squash w/ a large cavity for stuffing) sliced lengthwise and seeded
3 Tbsp Extra virgin olive oil
1 leek minced
1 carrot diced
1 stalk celery diced
1/2 or 1 small zucchini grated
1-2 tsp ginger minced
1 clove garlic minced
2 Tbsp fresh herbs (dill, chervil, basil, thyme) minced
1 cup short grain organic brown rice rinsed, cooked and cooled
1/2 cup toasted chopped hazelnuts

1) sauté first 6 ingredients over medium heat in 2 Tbsp olive oil, 3 mins. Lower heat and cook 2-5 more mins. Until translucent
2) Remove from heat and add herbs
3) Fold in rice and hazelnuts and season to taste with salt and pepper
4) Brush squash halves w/ olive oil and stuff w/ rice pilaf
5) Bake at 350 covered for 30-40mins. Until squash is tender
6) Serve with Roasted Red Pepper Sauce

Roasted Red Pepper Sauce

6 roasted red peppers (bottled will suffice if you don’t have time to roast)
2 cloves garlic
1/2 cup extra virgin olive oil
2 Tbsp fresh basil
1 Tbsp light miso
1 tsp chipotle paste

1) puree all ingredients and season to taste w/ celtic sea salt
